"Mozzarella" is made from cow's milk with the addition of table salt, bacterial cultures of mesophilic lactic acid bacteria, thermophilic streptococci and Bulgarian bacillus, as well as a milk-coagulant enzyme preparation of microbial origin, thanks to which the product can be consumed by vegetarians. The composition of the brine includes drinking water, table salt and citric acid.
