Preparation steps

Kneading the dough — Grate cold butter (200 g) into the flour and rub with your fingers until it resembles fine crumbs. Add the egg, cold water and salt, and knead into a soft dough. ⏱ 10 min. Guide: the dough should be elastic and not stick to your hands.

Chilling the dough — Shape the dough into a ball, wrap in cling film and place in the fridge. ⏱ 60 mins. Guide: the dough should become denser and easier to roll out.

Forming the cakes — Divide the dough into 8 pieces. Roll each piece out very thinly, almost transparent. Bake on parchment paper at 200°C until lightly golden. ⏱ 5–7 min per cake. Guideline: the edges should be slightly browned and the centre dry.

Preparing the cream (base) — Mix the milk, sugar and 40 g of flour, boil over medium heat until thickened. ⏱ 7–10 min. Guideline: the mixture should be thick, similar to custard.

Whipping the butter — Whip the softened butter (250 g) until it becomes a white, fluffy mass, then gradually add the cooled custard base and vanilla sugar. ⏱ 5 min. Guideline: the cream should be smooth, silky, and free of lumps.

Assembling the cake — Spread a thick layer of cream on the cake layers, pressing down lightly. Cover the top and sides with cream as well. Crumble one cake layer and sprinkle over the top. ⏱ 10 min. Guideline: the cake should be even, with the cream distributed evenly.

Soaking — Leave the cake in the refrigerator for at least 3–4 hours, preferably overnight. ⏱ 180 min. Guideline: the layers have become soft and soaked with cream.
