Herring under a fur coat with shrimp
Herring under a fur coat with shrimp is a refined variation on the classic Eastern European appetiser, where the traditional saltiness of herring is combined with the sea sweetness of juicy shrimp. The dish retains its legendary layered texture and recognisable appearance, but takes on a lighter, more delicate flavour. All the ingredients are easy to find in Ukraine, making this dish the perfect choice for a festive table when you want something familiar but with a sophisticated maritime touch.
Variations
You can replace the prawns with lightly salted salmon for a richer flavour.
Add a layer of grated apple — this will make the taste refreshing.
Use cream cheese instead of some of the mayonnaise for a more delicate texture.
Secrets of tenderness and taste
Chill all ingredients to 4–6 °C before assembling.
Peel the prawns before cooking and do not overcook them so that they remain juicy.
Do not press down on the layers — the structure should remain airy.
Leave the dish to rest in the refrigerator for several hours so that the flavours harmonise.
Tips on ingredients
Choose medium or large prawns, as they are sweeter and denser.
Buy lightly salted herring — overly salty herring will overwhelm the tenderness of the prawns.
The potatoes should be yellow and not crumbly.
Boil the eggs for 10 minutes so that the yolks are firm.
Small culinary nuances
The dish is best served chilled — at least 2 hours.
Serve on a bed of lettuce or cabbage — it looks refreshing.
Add dill or parsley just before serving.
Prepare no earlier than 3-4 hours before the celebration.
