Preparation steps

Boil some water in a pot. Add some salt and lemon juice. Put peas and green asparagus. Cook them for 3 min. Then, place vegetables in a bowel of ice water.

Let’s cook sauce: mix lemon juice with honey, olive oil, mustard and balsamic vinegar. Stir till the homogeneous condition, add some salt to your taste.

Cook poached eggs: boil some water in a pot, add some vinegar and salt. An egg is to be broken into a glass. Stir the water well with a spoon to make a whirlpool and pour an egg in cautiously. In a minute take it out with a skimmer, put it onto a paper kitchen towel and let it dry.

In a salad bowl we put beans and asparagus and poached eggs on them. Add green peas and serve with the sauce. Before the serving we sprinkle it with almond.
